Quick Chilled Lima Bean Soup

Try cooling off with a tasty and nutritious bowl of chilled lima bean soup. Lima bean are already high in healthy protein, and a scoop of Boku will add even more nutrition to this great dish.


Ingredients

3 cups tomato juice 2 cups plain yogurt 1 10 oz. package frozen lima beans
1 teaspoon curry powder ¼ cup Boku Sea salt and ground pepper to taste

Instructions

In the container of a Vita-Mix or other high-speed blender place the tomato juice, yogurt, frozen lima beans, curry powder and Boku. Blend until smooth and check for seasoning.
