
- 2 Scoops Boku Super Shrooms
- 2 cups organic all-purpose flour
- 3/4 tsp baking powder
- 1/2 tsp sugar
- 2 tsp kosher salt
- 1 cup plain organic yogurt
- 4 tbsp olive oil
- 16 oz goat cheese
- 1-3 tbsp of hot water
- chopped green onion
- sliced radishes

- Whisk baking powder, Boku Super Shrooms, sugar, flour, and salt in a large bowl. Add yogurt and stir to combine. Transfer dough to a lightly floured work surface and knead until mostly smooth, about 1 minute. Divide into 4 pieces, cover with plastic wrap, and let rest 15 minutes.
- Working one at a time, roll out each piece of dough into a round about ⅛” thick. Heat 1 Tbsp. oil in a large skillet over medium. Working one at a time, cook rounds of dough until underside is golden brown and flatbread is beginning to puff, about 2 minutes. Flip and cook until other side is golden brown, about 1 minute longer; transfer to a plate. Repeat with remaining oil and rounds of dough.
- Add goat cheese to a medium sized mixing bowl. Add one tbsp of hot water at a time to the cheese, whipping together with a fork until goat cheese is a smooth, spreadable consistency.
- Spread goat cheese onto flatbread and top with our various mentioned topping combinations or be creative with your own. Enjoy!
